Crock Pot Enchiladas. We love enchiladas, but with the heat topping
triple digits I just cannot bear to turn on the oven, here is a easy
alternative for enchiladas!
Ground Beef
Tortillas softened in oil
Enchilada Sauce
Shredded cheddar cheese
Black olives
Soften tortillas in pan with oil (do not fry just soften)
Make meat mixture by browning ground beef adding cumin, chili powder, garlic and onion powder, olives, and 1/2 your enchiladas sauce. Stir
mixture and roll into soften corn tortillas.
On bottom of crock spoon enchilada sauce, then begin layering your
rolled tortillas, between each layer spoon more sauce and top with
cheese, repeat layers until you reach top of crock pot.
Cook on High for 4 hours.
Serve with rice and beans and sour cream!
