Crock Pot Enchiladas

Crock Pot Enchiladas.  We love enchiladas, but with the heat topping triple digits I just cannot bear to turn on the oven, here is a easy alternative for enchiladas!
 Ground Beef
Tortillas softened in oil
Enchilada Sauce
Shredded cheddar cheese
Black olives


Soften tortillas in pan with oil (do not fry just soften)



Make meat mixture by browning ground beef adding cumin, chili powder, garlic and onion powder, olives, and 1/2 your enchiladas sauce.  Stir mixture and roll into soften corn tortillas.




On bottom of crock spoon enchilada sauce, then begin layering your rolled tortillas, between each layer spoon more sauce and top with cheese, repeat layers until you reach top of crock pot.



Cook on High for 4 hours.

Serve with rice and beans and sour cream!

Homemade Tacos


Nothing like homemade tacos, crispy shells, spicy meat, and melted cheese!


Start by frying and shaping corn tortilla shells in hot oil- you have soften the tortillas first turning in the host oil , but frying, then you fry each side, shaping to make a taco shell.



Let you shells cool on double ply paper towels-





Next make your meat, use 2- 5lbs of ground beef and seasoning.  You can make you own seasoning with cumin, chili powder, onion flakes, and paprika, or if you looking for super easy use Schillings Taco mix.





When I make tacos, I make a lot! 


Fill your shells with warm meat and top with cheese setting on doouble  ply paper towel as you fill each one.
 
Top with lettuce , tomato, sour cream, salsa, olives, ect.

Conchinta Pibil

This is Yucatan dish full of flavor , a nice blend of hot and sour!

 Using orange juice, lime, lemon anchiote' chili paste, and seasonings you marinade the meat over night.





You layer your crock  layer bottom of crock with banana leafes, in Yucatan style.
Place marinade meat with red onions in crock, cover meat with banana leaf and cover .








Meat is used with corn or flour tortillas, or a torta for a sandwich and pickled red ions, sprinkled with queso fresco, and cilantro to taste.

Sonarian Green Enchiladas


This is yummy treat to make use of that leftover masa from Christmas.


Prepare Masa (no lard)

Make Masa Patties

Fry Patties in Lard



Layer Patties in baking dish



Smother Patties with 1 larg can of Green Chili Sauce and bake for 30 mins adding more sauce as needed to keep moist.


Plate and top with shredded Jack cheese, lettuce, tomatoe, sour cream and black olive.

Christmas Tamales

It is our tradition at Christmas to make Tamales and Posle'.  Posole' is a Mexican tradtional Christmas Soup, and oh so yummy.  Made with hominy, red chili , pork, and spices. Then it is topped with cilantro, lemon juice, green oions and small dollop of sour cream.

Making the home made red sauce

 Add Flour and cook till tosated



Add Puree chile

Simmer an put aside for later...


Cook Meat in a crock pot 12 hours then pour over the chili mixture and let cook some more.....


Soak the corn husk overnight


Make the Masa


Add Chili Powder and Lard to Masa



Wrap Tamale



Steam





Celebrate!
